Etymology

From French epaulette, a diminutive of epaule, 'shoulder,' ultimately from Latin spatula, 'shoulder blade.' The ornament became a military badge of rank. Zoologists then borrowed the term for a conspicuous shoulder patch, especially the colored feathers of certain birds.
