   The ostler rubbed down the horses while the passengers ate supper.

A variant of hostler, shortened from Middle English hosteler and Old French hostelier, 'innkeeper.' Loss of the initial h accompanied the narrowing from an innkeeper to the servant who tended guests' horses.
