Through northern Italian articiocco and Spanish alcarchofa from Andalusian Arabic al-kharsufa, based on Arabic al-khurshuf, 'the artichoke.' English reshaped the unfamiliar ending under the influence of choke, but the plant's name is not historically derived from the verb choke.
