From Medieval Latin insipiditas, from Latin insipidus ('tasteless'), or analyzable in English as insipid + -ity. Insipidus combines in- ('not') with sapidus ('savory'), from sapere ('to taste; be wise'). The physical lack of flavor was extended figuratively to dullness and lack of character.
