From Spanish azucar mascabado or Portuguese acucar mascavado, 'unrefined sugar.' Mascavado is the past participle of mascavar, 'to separate or process raw sugar,' a form ultimately associated with Latin minus, 'less,' and caput, 'head.' The English spelling shifted to muscovado.
