Simplified etymology

Fudge probably comes from fadge, an old verb meaning “to fit.” In the early 17th century it meant to turn out as expected or to merge together, later developing senses involving clumsy fitting and dishonest manipulation. The American name for the sweet dates from about the 1890s and was probably suggested by the sense “merge together,” referring to the mixing of its ingredients.

Probably a variant of fadge (“to fit”), the confectionery sense having evolved from the meaning of “merging together” or “turning out as expected”.
