Simplified etymology

Soy, formerly also shoy, is a Japanese shortening of shōyu, a name for soy sauce ultimately derived from Chinese elements meaning “salted, fermented beans” and “oil.” It probably entered English through Dutch, whose corresponding form is soya, during the period of Dutch trade with Japan.

From Dutch soja, from Japanese shōyu ('soy sauce'), itself a borrowing from Chinese (Mandarin jiàngyóu), 'sauce oil'.
